Apple Crumble Slice

Inspired by Lady Lola's Blueberry Crumble Slice on instagram’s which I was obsessed with during the 2021 lockdown. This apple crumble slice combines the the beloved apple cumble with the blueberry crumble slice.

Ingredients:

  • 4-6 Apples (I leave the skin on)

  • 2 tsp cornflour (for apples) 

  • 2 tsp of cinnamon (pastry)

  • 1.5 cups self-raising flour

  • 1/2 cup Oats 

  • 3/4 cups softened unsalted butter

  • 1/3 cup raw sugar (for pastry)

  • 1 egg

  • 1 tsp vanilla essence


Method:

  1. Preheat the oven to 180 degrees.

  2. Chop up your apples (I leave the skin on), if you don’t have enough add raspberries.

  3. In a medium bowl combine cornflour and apples, tossing until apples are well covered in cornflour.

  4. In a large bowl your hands to combine flour, butter and sugar until crumbly.

  5. Add cinnamon, egg, vanilla essence and oats, combine using your hands until crumbly. 

  6. Butter your oven dish or line with baking paper. 

  7. Press half the crumble mixture into the oven dish, add your apples, then crumble the rest of the crumble mix on top. 

  8. Bake in the oven until golden brown.
